Chunky Monkey Baked Oats

Image
March 2021 It seems I came late to the party on the concept of baked oats - apparently they have been a 'thing' for quite some time, and understandably so. When breakfast looks like dessert, it's proof that breakfast is the best meal of the day!  Add in the quick and easy preparation, and we're on to a winner. Simply blend 30g almonds, 40g oats, 1 tsp nut butter, 1 tbsp cocoa powder, sprinkling of cinnamon, ½ tsp baking powder, ½ banana and 200ml milk.  Pour in to an ovenproof dish, poke in a few chunks of dark chocolate if you're feeling extra decadent, and bake at 200C for 20-25 mins.  What you get is a comforting sort of porridge souffle, warming, satisfying and nutritious but with all the taste and texture of naughtiness. This is a great one for experimenting with flavour combinations - why not try vanilla and nut butter, or let your imagination run wild.

3 Ingredient Healthy Breakfast Pancakes

Image
February 2021 Approaching Shrove Tuesday, I was discussing all things pancakes with a friend, and it got me thinking  - they're so quick, easy and tasty, why do I only make them on 'pancake day'?!  Around the same time, another friend sent me a recipe for some pancakes she had made.  I say recipe, more a sentence.  They sounded so good and genuinely nutritious that I had to make them for breakfast the very next day.  Simply half a banana, 1 tbsp of flax or chia seeds and 1 egg blended with a stick blender/ food processor/ Nutribullet, spooned in to 3 dollops in a hot pan and flipped when browned.  I did mine as thick dollops so that the inside stayed a little gooey, whilst the outside crisped up, but my friend had just as much success with thinner ones.  Then let your imagination run wild with topping options.  I went for Ippolito orange (my current obsession) and stem ginger, or be a bit naughty with caramel and sliced banana.  It felt like ...

Plant-Based Brunch. Copenhagen, Denmark

Image
November 2019 I pretty much lived in this cafe whilst in Copenhagen.  Everything is pant-based but that certainly doesn't mean their offerings are lacking flavour or creativity - their brunch was a taste sensation!   For the sweet tooth, enormous stacks of fluffy banana pancakes with silky cashew cream and the sweet, tart crunch of freeze dried raspberries.   For the more savoury inclined, a smorgasbord of dehydrated peppers and aubergines, and raw crackers to dip in sweet potato puree and mushroom pate; rice paper rolls with sprouts and pickled red onions; tahini avocado with sweet pops of balsamic pearls; rye and sourdough bread - a feast of nutrients to set you up for the day. The turmeric latte was the best I've ever taste, with the addition of ginger juice giving it an addictive spicy kick. Find it all at Plant Power Food, Copenhagen.
