As I mentioned, I'm always on the look out for unusual, guilt-free snacks, and when they use up ingredients I have lying around, even better! I'm a fan of the plain cashew, but this jazzed up version is a moorish snack or a something-a-little-bit-different accompaniment to an aperitif. Quick and easy to make - whisk an egg white, pour in cashews ensuring they are all covered, scatter on a baking tray, sprinkle with a little salt, and a generous amount of paprika and lime zest, bake at 180C for around 10 mins. Crispy, salty, spicy, zingy and utterly delicious!
