All The Seeds Snack Bars. My house, UK

I'm always on the look out for exciting, healthy snacks to liven up the day.  These took only minutes to prepare, taste delicious, and are bursting with essential amino acids and minerals.  I mixed sunflower, pumpkin, chia, and sesame seeds (but use whatever you have to hand) with desiccated coconut and dried cranberries and then added honey until the mixture came together.  Spoon in to a grease-proof papered pan, and bake at 160C for around 40 mins.  Once cool, cut into bars.  I was in two minds whether to drizzle with dark chocolate, I haven't yet but it's an option.
The great thing about these bars is that not only are they delicious - all the flavours of the different seeds come through, they have a wonderful crunch, and a bit of chewiness and sweetness from the dried cranberries, but they are light.  Perfect for when you are a little peckish but don't want to fill up too much.
